Healthy Choice: Mini Pancakes

As you may know, one of my favorite blogger is Suzie {Hello-October}, and I read her blog whenever there is something new to read {I also read things she has written several months/years ago.. not stalkerish at all..}. So Suzie posted a recipe of Hazelnut Pancakes and they looked so delicious that I had to roll up my sleeves and get to business making them myself.

Now, I did change the hazelnut milk {because I didn’t have it} to almond milk instead and it worked really well. I’m guessing you can use regular milk too if you don’t have a more organic one.

1/2 tsp Coconut Oil
100g Flour
30g Sugar
100ml Hazelnut Milk {or almond milk/coconut milk}
1 Medium Egg
/ Serve with whatever you like. I ate my pancakes with nutella with coconut flakes sprinkled on top and a kiwi. My smoothie of choice was made of blueberries, milk, and white chocolate/raspberry protein powder.
